What I Ate Wednesday #4

Well folks, it’s Day 6 of my second round of Whole30! (Technically it is about my fourth attempt at Whole30, I’ve successfully completed one, but once again, I’m going for a successful round two— it’s wedding season, you guys…)

More importantly than that, today was the last day of school! 😀

The last day, I knew, would consist of extra goodies and treats. I took extra precaution to fill my lunch box with delicious, healthy things to ward off the temptations sure to be lurking.

Breakfast: Running late to work, I quickly threw three eggs in boiling water to prep my Hard-boiled Eggs while I ran around my house trying to get ready. My Green Smoothie was also prepared, but devoured before it was photo time. Oops!eggsThe students got out of school early today, so the teachers were celebrating with an Italian Feast after school. During my break I opted to snack a little bit and wait to bring my Whole30 Italian Lunch to the feast.

Snack: Simple and delicious. An Apple Pie Larabar and 1/2 cup of Strawberries did the trick! Along with copious amounts of water.Larabar & StrawberriesAs I planned, the Italian Feast was overwhelmingly delicious looking AND smelling. And so NOT Whole30! I’m talking bread, cheese, and more bread… and cheese. With this in mind, I intentionally planned my lunch to be “Italian-themed”.

Lunch: Incredible. Say hello to Fresh Zoodles with homemade Roasted Red Pepper Sauce and Ground Buffalo Italian Meatballs. Can’t forget the Fresh Basil! For starters, there was a piece of fish I was itching to cook, but apparently I waited too long since buying it. I also wanted to make some plantain chips. It’s delicious! And it’s yummy!” for the rest of the evening. Okay Sarah, I get it, cheese is delicious and not Whole30 approved! 😉

Killin’ It + Grillin’ It

10 pulls up -or- inverted rows

20 sit-ups

REPEAT 5x (the faster the better)

This evening, I lugged out the good ole’ George Foreman to grill up some burger deliciousness. GrillinI also added a side of sautéed red cabbage for some veggie action. Does anyone else think cabbage can be pretty or is it just me?

Then things started getting real crazy and I tossed on a peach too. The day I discovered the grill is not just for meat was a good day. I love grilled fruit! Pineapples, peaches, bananas, and watermelon (bet you didn’t see that one coming) are my favorites.

Sneaky Spinach: 3 Ways to Add This Leafy Green to Your Plate

Spinach is not only my favorite vegetable, but it is also a powerhouse of nutrients! Check out this nutritional profile: Vitamin A, C, Folic Acid, Calcium, Iron and more! Not to mention the Vitamin K, which aids in building strong bones! But if leafy green things make you squirm, it can be hard to chow down on a bunch of Spinach leaves all by their lonesome. So if you, your spouse, child, mother, or cousin’s-friend’s-brother aren’t as big a fan as I, here are some ways you can add spinach to your diet!

Basically it’s Spinach in STEALTH MODE. You won’t even notice it’s there.


1. Burgers – Your favorite burger recipe may already have some chopped onions, garlic, and herbs, but does it have spinach!? Spinach is easy to finely chop and throw in to add an extra layer of nutrition to your patties. Plus, it looks very similar to chopped fresh parsley, cilantro, or basil. Even the smartest of veggie detectives in your life will be fooled!

2. Sauces – More specifically your homemade tomato sauce or pesto. Pesto is easy; the basil already gives it that bright green color. Adding some spinach won’t even tamper with the flavor or color. As for your tomato sauce, consider making it with more of a “chunky style” and add in fresh basil and spinach to the mix. Again, it’s an easy way to make spinach delectable.

3. Smoothies – This one may take a little more convincing, but once you try it (or whoever else you’re trying to get to drink it) you will be HOOKED. The beauty of spinach, aside from its nutritional stats, is its subtle flavor. The fruit will overpower the spinach. I challenge you to make your favorite strawberry banana concoction and add a big handful of spinach. You won’t taste a thing different. Sure it may look bright green, but if you can convince yourself that you’re celebrating St. Patty’s Day early, you’re golden.

1 banana, 7 frozen strawberries, 1/2 cup coconut water, 1 tbsp coconut milk & a hefty handful of SPINACH. BOOM.
