What I Ate Wednesday #3

Florida was a chilly 48-degrees when I walked out the door this morning. And in the words of one of my Kindergarten students, “Miss Baxter, this is SOOO unusual outside!!” Today was especially delicious due to my meal prep for the night before. Meal prep saves the day! Although, I may or may not have had to eat breakfast in the car due to my lack of desire to pry myself from my warm, toasty bed this morning.

Breakfast: Three scrambled eggs with a side of roasted broccoli and two slices of mouth-watering sugar-free bacon. Not to mention the fresh, tart taste of red raspberries. Mmmm. And it tastes even better in the car… NOT.Egg Breakfast

Lunch: I decided to go Raw today for lunch. I made my own version of Raw Pad Thai filled with Dino kale, broccoli, carrot, green onion, cucumber, red cabbage, and green bell pepper. Plus a Spicy Jalapeño Coconut dressing made from coconut milk, jalapeño, ginger, lime, and green onion, which was all blended to creamy perfection.Raw Pad Thai Raw Pad Thai

In other news: My roommate and I just signed up for The Color Run – Orlando and we are SUPER excited. We’ll be reppin’ Team DyeHard so the training will be starting ASAP! The Color Run is the self-proclaimed “Happiest 5k On The Planet” and can you see why?!

Eating Evolved Coconut Butter Cups

You know you can trust a company that states: “Chocolate: It’s food, not candy.” Yeah they have my vote already. Well, I have been hearing a ton of positive comments about Eating Evolved, therefore giving them a shot was on the “To Do List”. I didn’t know where to start. The website has all kinds of amazingly delicious creations. From Sea Salt + Caramel Coconut Butter Cups to the Vanilla Bean + Coffee Chocolate Bar, the list of star-studded chocolate options makes you want to just have all of them at once. Okay, yes, all at once. #sorrynotsorry

In efforts to pace myself, I ordered my first Eating Evolved experience via coconut butter cups. Currently, the company sells three varieties:

Classic Dark Chocolate
Dark Chocolate Mint
Dark Chocolate Caramel + Sea Salt

When the chocolatey-treasure box arrived at my door step, my first instinct was to devour all the chocolate, but then the logical-side of my brain kicked in shouting, “No! Then it will all be gone and you will be sad! Pace yourself, lady!” The emotional/impulsive-side of my brain actually listened this time (surprisingly) and I carefully sampled eat one over the course of this past month. A month. Now am I impressive, or what?

The verdict is in!
1. EVERYTHING: Well, I am going to try to be more specific than that so this post is actually helpful, but that word was the first thing that came to mind.
2. Ingredients: a Paleo (and Vegan) dieter’s friend. This ingredient list contains zero dairysoyor gluten products. Thank you, Eating Evolved. This is an incredible feat in the chocolate world and we really appreciate it.
3. Flavors: I am not trying to give a cheeky, optimistic answer here. I really loved all three magnificent varieties of these coconut butter cups. I was not disappointed by any of them (in fact, quite the opposite). I will, however, give you my “rankings”: Caramel + Sea Salt, Mint, and then Classic. Again, all of them were AMAZING, but if you put caramel + sea salt on chocolate, you have me wrapped around your pretty little finger.
4. Sugar Content: These treats are not super-sugary at all! One cup has only 3-5 grams of sugar (depending on the variety). It then had me curious about a typical peanut butter cup, which by the way, has 10.5 grams of sugar!! Mint Creme Coconut Butter CupsNeutral:
1. Availability: The company is relatively new, from my understanding, so I know this is just in the beginning stages. My hope is to soon find these at my local grocery store versus online. This isn’t a terrible issue, but just something I am hopeful for in the future!
2. Packaging: This is basically my fault. I live in a hot state. Florida isn’t known for our cool, crisp weather. I should have listened to the website that said, “pick the warm weather shipping option”. Nahhh, it will be fine. I think there is a cold front coming. Silly, Victoria. My cups were a tad melty when they arrived so I stuck them in the fridge for a bit to harden up. Lesson learned. #mybadClassic Coconut Butter CupDislikes:
I always give my honest opinion about the products I review on this blog. I honestly have zero dislikes about this product. I GREATLY enjoyed every last bit of the coconut butter cups. I believe they are fairly priced (although I always hate paying for shipping no matter what the product). The ingredients are of high quality. The company makes me want to jump on board with what they are promoting. No complaints here.

What I Ate Wednesday #2

Welcome to another rendition of What I Ate Wednesday!

A crazy thing happened today. I woke up early without planning it. And if you have extra time in the morning, clearly its pancake time.

Breakfast: Paleo Coconut Peach Pancakes. Coconut Peach PancakesNormally I always try and bring a veggie or two to the plate for breakfast, but I was quite full after these pretty little things. I love the flavor of coconutpeaches. It tastes so tropical… if that makes any sense. 😉

Lunch: I worked today, so with the frantic lunch time, I didn’t manage a photo. Lunch was a hamburger + a raw Pad Thai salad that was inspired by the one on Kristina’s blogRaw Pad Thai SaladSnack: ATTENTION EVERYONE. God made candy and they’re called dates. Delicious, delicious dates. STOP EATING FAKE CANDY. This is straight-from-nature-candy!! Seriously, put down the Snickers. Pick up the dates.

Date CandyDinner: There was BOGO BACON at Publix today. The cherry on top of that cake is that Publix has sugar-free bacon! Well done, Publix. Coconut Kick Tilapia

For the moment when you really would love some coconut shrimp, but all you have is tilapia in your freezer.

Coconut Tilapia
Coconut Kick Tilapia
(serves 2)
2 Tilapia Filets
1 Egg
2 tsp Hot Sauce (or more if you like it hot!)
2 tbsp Coconut Flour
3 tbsp Unsweetened Coconut Flakes
Coconut oil (for greasing)
Salt & Pepper

1. Preheat oven to 450-degrees.
2. Grease a baking sheet with coconut oil.
3. Place egg, hot sauce, and 1 tbsp water in a bowl; mix together until egg is scrambled.
4. Place coconut flour and coconut flakes in a second bowl; mix together until combined; season with a few dashes of salt & pepper.
5. Dredge tilapia in egg bowl, then coconut flake bowl; place on baking sheet. Repeat with second filet.
6. Sprinkle any remaining coconut on tilapia.
7. Bake in oven for 6-8 minutes.

This is COCONUTS!And I paired this delicious spin on the classic coconut shrimp with some roasted zucchini!

Flavors of the Week

I absolutely love trying new things, but with my personality I often get super excited about a few things, then move on to the next group of things I am thrilled about. To me, it keeps life interesting and exhilarating. To others, it becomes just down-right confusing.

Currently, these are a few of my favorite things that I enjoy to stick to a healthy lifestyle (and just for fun).

1. My Crockpot: I’ve made my first batch of homemade chicken stock & vegetable stock. When life give you stock, make soup! The crockpot has been an extraordinary tool to help on busy days when I just want to come home hungry for dinner. There is a healthy dinner waiting to be devoured. Plus, the aromas act as an extraordinary air freshener.

2. Twice: This website is filled with designer brands at a severe discount. The site allows people to sell their gently used, current, name-brand clothing and then they re-sell the products at dangerously low prices. Dangerous for me, at least. Twice is really great about serving first-time buyers too. When I created an account, I gained a $10 credit. I gained another $10 credit for adding the app. Finally, another $10 credit for referring a friend. On top of all that, first time buyers currently get a 50% off discount. I received $60 of gently used, designer brand clothing for FREE (yes, you read that correctly).

3. Coconut Cream Pie Larabar: EAT ALL THE COCONUT THINGS has been the theme of my life recently, but I have it completely under control. I may need to chill out a bit. Good thing Whole Foods has a coupon for Larabars right now. Also, Target has 5% back on the Cartwheel app. STOCK UP! Every time I am in need of an emergency snack, these are the perfect treat and great to tide me over to the next meal.

4. Tennis: Who knew this game could be incredible?! I was a gymnast growing up. I have that whole balance and tumbling thing down pat still, but as far as games that include a ball, I may or may not have a hard time with. Recently, Austin and I have been playing a TON of tennis and I finally have been able to keep a rally and proper swing– so now I enjoy it 😉

5. Iced Coconut Coffee: As you may have guessed, I am Iced Coffee’s Number One Fan. Go Iced Coffee! Win all the taste buds! I have been making these iced coconut coffees every morning lately (and occasionally in the afternoon too). I used to be a dedicated fan of Dunkin Donuts’ Caramel Iced Coffee. Now that there is an absence of sugar and dairy in my life, those are no longer an option. With these Iced Coconut Coffees though, it really no longer matters. Adios Dunkin!
